Ingredients
- 10 oz gluten free spaghetti
- 1/4 cup olive oil
- 4 garlic cloves, sliced
- 2 pints cherry tomatoes, halved
- 1/4 teaspoon red pepper flakes
- Salt and pepper
- 1 cup fresh basil, torn
- 1/2 cup grated Parmesan
- Shortcut: 1/2 cup jarred basil pesto instead of the tomatoes and garlic
Steps
- 1Cook the pasta by the package directions, saving 1/2 cup of the water.
- 2While it cooks, warm the oil and garlic in a large skillet over medium heat until the garlic is just golden.
- 3Add the tomatoes, pepper flakes and a pinch of salt. Cook 6 to 8 minutes, pressing a few with a spoon, until saucy.
- 4Toss in the pasta with a splash of pasta water, then the basil and Parmesan.
- 5Pesto version: toss the drained pasta with pesto and a little pasta water, then top with halved fresh tomatoes.
Prep 5 min, cook 15 min. Label check: Pasta must be labeled gluten free. Jarred pesto and pasta sauce: many add sugar. Pick one with no sugar in the ingredients. Pre-grated Parmesan: check the label for gluten free.
