Ingredients

  • 2/3 cup coconut cream
  • 1 1/2 cups unsweetened shredded coconut
  • 1/2 cup sugar-free dark chocolate chips
  • 1 teaspoon coconut oil
  • Pinch of flaky salt

Steps

  1. 1Mix the coconut cream and shredded coconut. Roll into 12 small balls.
  2. 2Set them on a parchment-lined tray and freeze 1 hour until firm.
  3. 3Melt the chocolate and coconut oil in short microwave bursts, stirring each time.
  4. 4Dip each ball in chocolate, put it back on the tray and sprinkle with salt.
  5. 5Chill until the shell is set. Keep them in the fridge.

Prep 20 min, chill 2 hours. Label check: Chocolate must say sugar free (many are sweetened with stevia or erythritol). Also check it says gluten free. Shredded coconut: buy unsweetened. Coconut cream: buy plain, not cream of coconut (which is sweetened).
