Ingredients

  • 1 unbaked 9 inch pie crust
  • 3 large eggs
  • 1 cup sugar-free maple-flavored syrup
  • 1/2 cup granulated sugar substitute that measures like sugar
  • 3 tablespoons melted butter
  • 1 teaspoon vanilla
  • Pinch of salt
  • 1 1/2 cups pecan halves

Steps

  1. 1Heat the oven to 350 degrees F.
  2. 2Whisk the eggs, syrup, sweetener, butter, vanilla and salt until smooth.
  3. 3Spread the pecans in the crust and pour the filling over them.
  4. 4Bake 50 to 60 minutes, until the center is set and only jiggles slightly. Cover the crust edge with foil if it browns too fast.
  5. 5Cool at least 2 hours before slicing. Store in the fridge.

The crust still has carbs. Check with your doctor or dietitian about portion size.
